Kimchi (national dish of Korea) has long been praised because of its basis in nutrition-rich cabbage. (Although kimchi can be made without cabbage, as I learned when I was stationed in Seoul, it’s like hamburgers and beef — burgers don’t have to have beef, but that’s the way to bet.) I like kimchi, and I like cole slaw, but I can’t cook with cabbage without a recipe; attempts to wing it (my usual cooking mode) have fared poorly.
