I'm guessing that you did not learn that fresh natural apple cider, even when kept in the fridge, becomes fermented within a week or three? Speaking as one who left a jug from a local CT press alone too long and found bubbles in it when I took it out of the fridge. I would love to say the flavor was improved, but apparently accidental applejack is not in my taste zone. 😐
