If you love pesto — we were recently introduced to garlic scapes, which are just garlic flower stalks cut off to encourage the bulbs. Local market was giving them away. Never heard of them before. Googled them on my phone. First recipe hit: pesto. Done! Full bag.
Wow. You have to food process the living crap out of them or you’ll be picking fiber out of your teeth for days, and you have to love garlic with all your heart and all your soul and all your mind, but wow. KILLER pesto!
