I was on a homemade cheesecake kick several years ago, using sweetener substitute and minimal crust. My pinnacle achievement was a soft tofu “cheesecake” — low carb, low fat, high protein, awesome! I served some to family, and our cheesecake-loving youngest PA niece (then in high school, now married and a new mother) said nice things. 😊👍

Months later, the family was gathered and planning a picnic, and I offered to bring dessert. “NOT that awful, horrible tofu thing!” exclaimed our niece. “Omigawd that was terrible!”

“But, but, you said you liked it!” I protested.

“I WAS BEING POLITE! IT’S WHAT PEOPLE DO!”
