I was leafing through a cookbook from the 19th century, just to get an idea of how "real cooking" went back then. (I like cooking.)

- Measurements were, shall we say, imprecise.

- Baking temps were... peculiar? As in, let the oven heat up until the hairs on the back of your hand start to shrivel slowly. (How many hairs did people grow on their hands back then?)

- "Doneness" as a concept seemed to be IYKTYK. Apparently if you didn't, you had no business being in the kitchen!
