I have, it’s very tasty, and it has a much lower GI (glycemic index — how quickly a food raises blood sugar) so it is healthier for me… but it’s more like a whole grain than a “real” rice. Although I love whole grains, which would be horrible for you!
I also love tofu, which you mentioned as a meat substitute, but I enjoy it just on its own (okay, seasoned). Deb thinks I’m nuts ( not the first time!).
