Deb loves frittatas (one of the first breakfast dishes I cooked for her) but my “recipe” is “throw a bunch of fryable stuff in a pan, fry it, season it, pour a bunch of beaten eggs over it, cook until nearly set, dump cheese on it, broil until cheese is brown & bubbly” and serve. We did one earlier this week with zoodles, onion, peppers, kielbasa, and a Mexican cheese blend. A few tablespoons of whole wheat flour to help hold it together, but I used to love Bisquik (too many simple carbs for me now, but it made the whole thing puff up and feel more light).
