Deb likes chili with rice, but I found (based on before & after blood glucose tests) that for me, white rice might as well be cane sugar bits. 😢
We tried our go-to rice substitute, riced cauliflower, but it’s not the same. Although riced cauliflower does well with other rice recipes, it doesn’t work with chili — maybe the way rice soaks up the sauce?
Haven’t tried cauliflower in a rice pudding recipe — I used to love rice pudding! — because I imagine it would be a shoddy imitation. <sniff!>
